Sweet and Spicy Popcorn

If you haven’t heard, popcorn is popping full of nutritious benefits. It’s a whole grain that packs a healthy dose of fiber. Popcorn often gets a bad reputation for being unhealthy with all the butter on it, but that doesn’t mean you can’t prepare it other ways — and no, I don’t mean you need to eat plain popcorn. Instead, use a healthy oil and some spices to pack in more nutrients to create this fun popcorn!

Combining the slight sweetness of honey and coconut with a spicy kick from cayenne and curry, at 70 calories per cup this popcorn is sure to be a favorite for bold-flavor lovers. Bring some to your next party or enjoy it during a romantic date night to spice things up!


Sweet and Spicy Popcorn

Recipe developed by Rebecca Vander Sluis

Makes 16 cups

Ingredients
2 tablespoons coconut oil
2 tablespoons honey
1 teaspoon cayenne pepper powder
1 teaspoon curry powder
½ cup popcorn kernels
¾ teaspoon salt (optional)

Directions

  1. Heat coconut oil in a large pot on medium-high heat. Add one popcorn kernel. Once the kernel pops, add honey to the pan, mix and add remaining kernels.
  2. Once the kernels are all popped, transfer into a large bowl and sprinkle with curry, cayenne powder and salt.
