Apricots with Basil Ricotta and Almonds

- 5 (36 grams) dried apricots
- 2 tablespoons (30 grams) part-skim ricotta cheese
- 2 (<1 gram ) basil leaves, finely chopped
- ¼ teaspoon (9 grams) honey
- 10 (10 grams) whole raw almonds
Place dried apricots on a small plate. In a small bowl, combine the ricotta cheese, chopped basil leaves and honey. Spoon the ricotta mixture onto each apricot. Top each apricot with two almonds and enjoy. Serves 1.
