Coconut Beet Berry Smoothie Bowl

All of my life, I’ve always said “I don’t care for beets” or “I’m not a beet fan.” I’ve said this for so long but, to be honest, I never actually tried a beet! Crazy, right?! I never tried them because, well, they looked a little weird and they smelled a little funny!

A few months ago, I finally built up enough courage and tried a beet one day! It wasn’t that bad! It didn’t taste like dirt, and it didn’t turn me into a monster, so I was slowly but surely turning into a beet fan! And after hearing about the wonderful health benefits of beets, you’ll become a beet fan, too!

Besides being low in calories, sodium and fat, beets are rich in folate, which is important for brain health. Folate is essential for good emotional and mental health! Beets can also help to decrease the risk of artery damage and heart disease. Beets contain betaine, which can help to lower blood levels of homocysteine. High levels of homocysteine are correlated with the increased risk of heart disease, so beets help to counteract this effect! If this doesn’t make you wanna try beets, I don’t know what will!

I wanted to experiment with a few recipes that included this beloved veggie, so I came up with this Coconut Beet Berry Smoothie Bowl! Surprisingly, these flavors tasted great together! Because beets can have a very strong taste, I was careful to balance the amount of berries and beets in this recipe. Instead of milk, I chose to use coconut water and vanilla Greek yogurt to give it a smooth, creamy texture.

The coconut water added just a subtle hint of paradise, which made this Coconut Beet Berry Smoothie Bowl sooo good! I topped it with a few of my favorite things: coconut, pistachios and of course chocolate! You can choose to top your smoothie bowl with whatever you desire, but I would highly recommend chocolate!

Coconut Beet Berry Smoothie Bowl

This Coconut Beet Berry Smoothie Bowl will have you craving veggies for breakfast every day of the week!  Coconut Beet Berry Smoothie Bowl -

Serves 1

Ingredients

  • ¼ cup sliced beets
  • 2½ cups frozen mixed berries
  • ½ cup vanilla Greek yogurt
  • ¼ cup coconut water

Instructions

  1. Add all ingredients to blender and blend until smooth and creamy.
  2. Pour in a bowl and top with your favorite toppings.
  3. Enjoy!
