PB&J Greek Yogurt Parfaits

One thing that never gets old in our home is peanut butter and jelly sandwiches, better known as PB&J! My kids can literally eat this at any meal, which is why I always keep a stash of peanut butter and jelly on hand.

Even though they are in love with the classic PB&J, I thought that it would be fun to switch things up a bit and make PB&J Greek Yogurt Parfaits! Parfaits are seriously the best thing ever. I’m able to add in lots of nutritious fiber with the whole grain granola, and lots of yummy protein and calcium with the Greek yogurt!

This PB&J Greek Yogurt Parfait is perfect for breakfast or for a fulfilling snack before a big game or practice. PB&J Greek Yogurt Parfaits - It was very easy to make! I started with my base, which was the whole grain granola. They have a lot of nutritious varieties and my kids can’t get enough of it.

Next, I added the Greek vanilla yogurt. We like using Greek yogurt because it’s slightly lower in sugar than regular yogurt and contains a great source of live and active cultures, calcium, protein and vitamin B12. I try to provide my kids with calcium-rich and protein-rich foods to help support their growth and bone health.

After you’ve added the yogurt, it’s time to add the peanut butter and jelly. Take a few tablespoons of each and layer it carefully. The last part is the fun part! You can choose to top your parfait with more yogurt, whipped cream, sprinkles, more granola…or all of the above, like I did! I love adding sprinkles whenever I can because it makes food so much more fun! Don’t you agree?!

This PB&J Greek Yogurt Parfait was a winner! It always makes me happy to create a recipe that my kids truly enjoy!

PB&J Greek Yogurt Parfait

Serves 1

Ingredients

  • ¼ cup whole grain granola plus extra for the topping!
  • ½ cup vanilla Greek yogurt
  • 2 tbsp grape jelly
  • 2 tbsp peanut butter
  • Optional: whipped topping and sprinkles

Instructions

  1. Place granola in the bottom of a small jar or cup and layer the remaining ingredients.
  2. Top with additional yogurt, granola, whipped topping and sprinkles, if desired!
  3. Enjoy!
