
All things pumpkin are here, including pumpkin cornbread — the perfect addition to your chili (or pumpkin chili, of course)!
Pumpkin Corn Bread
Ingredients:
- ½ cup cornmeal
- ½ cup whole wheat flour
- 1 tablespoon brown sugar
- 2 teaspoon baking powder
- ½ teaspoon pumpkin spice
- ¼ teaspoon salt
- ½ cup milk
- 1 egg
- ½ cup pumpkin puree
Instructions:
Preheat the oven to 425°F.
Whisk together cornmeal, flour, sugar, baking powder, pumpkin spice and salt. Add milk, egg and pumpkin and stir until fully combined.
Pour mixture into a greased 5-inch by 5-inch baking dish or double the recipe and use an 8-inch by 8-inch baking pan.
Bake 20 minutes and enjoy.
