
Flatbreads are so versatile and make for a tasty breakfast, lunch, dinner or appetizer. These are one of my favorite meals to throw together when I am in a hurry or I have random things in my refrigerator. For me, a good flatbread has simple ingredients with high flavor. This flatbread features some tasty vegetables roasted and drizzled with BBQ sauce.
What is the best cheese to use on a flatbread?
The options are endless but these are my favorites:
- Gorgonzola
- Goat cheese
- Brie
- Feta
- Cheddar
How many toppings should I put on a flatbread?
Try to limit toppings to no more than 5 main items. Herbs and spices should be added to optimize flavor without taking up too much space on the flatbread.
Does BBQ sauce have too much sugar?
Most BBQ sauce does contain sugar, vinegar and tomato. However, sugar in moderation can be extremely satisfying to our palates and a great accompaniment to many dishes. If you purchase a brown sugar or honey BBQ style, they can be higher in sugar than original style sauce. If excess sugar is something you are concerned with, purchase original style vs honey or brown sugar varieties.
Roasted Corn and Cauliflower BBQ Flatbread
Serves 4
Ingredients
- ½ head cauliflower small-medium
- 1 cup corn frozen, fresh, or canned
- 1 cup packed spinach roughly chopped
- ½ teaspoon paprika
- ¼ teaspoon chili powder
- ¼ teaspoon salt
- 1 tablespoon olive oil
- 1-ounce goat cheese
- ½ cup barbecue sauce + more for topping
- Parsley, chopped (optional)
- 2 Artisan flatbreads
Instructions
Preheat oven to 400 degrees Fahrenheit. Remove cauliflower florets from stalk. Clean and pat dry with paper towel. Cut into bite sized pieces.
On large sheet pan, place cauliflower and corn. Drizzle with olive oil, paprika, chili powder and salt. Toss to combine. Roast for 15-20 minutes or until cauliflower and corn has a slight char.
Once vegetables are done roasting, top each flatbread with ¼ cup BBQ sauce, fresh chopped spinach, roasted vegetables, goat cheese and fresh parsley. Drizzle with additional BBQ sauce if desired.
Cooking Note:
- Flatbread can be warmed in oven prior to adding toppings if desired.
