Now that school is back in session, weeknights are busier than ever! Between the after school activities, homework, and impatient hungry kids, it’s hard to find the time to prepare a wholesome meal. And to be completely honest with you, on some of those busy nights, I’ve relied on cold cereal! I know, I know, brutal right??

We all could use a little more convenience in our lives, so why not make dinnertime easy with this 30-minute Sheet Pan Honey Glazed Pork Chops with Sweet Potatoes & Apples recipe?

One of my favorite ways to prepare a hot, nutritious meal in a short amount of time is to rely on sheet pan meals, such as this recipe. Sheet pan meals are the greatest thing ever! You can put together almost any meat and veggie combo, and it will turn out great. There’s no standing over the stove-top stirring or tossing, which can be super inconvenient when you have a ton of things to do.

For this recipe, I chose to use lean pork chops, sweet potatoes, and apples. These items go together perfectly.

  • Sweet potatoes promote gut health. The soluble and insoluble fiber in sweet potatoes are beneficial to gut health.
  • Sweet potatoes help support healthy vision. Sweet potatoes are incredibly rich in beta-carotene, the antioxidant responsible for its bright orange color. Beta-carotene is converted to vitamin A in your body, which supports eye health.

To make this meal extra special, I seasoned my pork and sweet potatoes with a honey glaze. And arranged them onto my baking sheet. Then, I added the sliced apples on top.

Time Saving Tip:

To save you even more time in the kitchen, you can purchase the pre-cut apple slices.

Once you have everything arranged on the baking sheet, bake for about 25-30 minutes until the pork is thoroughly cooked and the veggies are tender. And that’s it! You have a complete, nutritious and satisfying meal that the whole family can enjoy!

Sheet Pan Honey Glazed Pork Chops with Sweet Potatoes and Apples

Serves 3

Ingredients

  • 6 boneless pork chops
  • 3 sweet potatoes peeled & cut into cubes
  • 2 red apples cored & sliced
  • 2 tbsp oil
  • 2 tbsp honey
  • 2 tsp fresh thyme minced
  • 2 tsp garlic powder
  • Salt/pepper to taste

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Spray a baking sheet with nonstick cooking spray or spritz with olive oil spray.
  2. In a medium bowl, whisk together oil, honey, thyme, garlic powder, and salt/pepper to taste. Add in pork chops and sweet potatoes and toss until all ingredients are evenly coated with glaze.
  3. Spread sweet potatoes and pork on a baking sheet. Add apples and bake for about 25-30 minutes or until sweet potatoes are tender, and pork is thoroughly cooked.
