Smashed Potatoes with Sriracha Mayo

Raise your hand if you are a potato lover! February is National Potato Lover’s Month. To celebrate, I made these smashed potatoes with sriracha mayo.

Serves 4

Ingredients:

  • 4 red potatoes
  • Cooking spray
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 to 2 tablespoon sriracha mayo

Instructions:

Add potatoes to a large pot of water. Bring to a boil. Then lower to a simmer for 25 minutes.

Preheat oven to 350°F. Spray a baking sheet with nonstick cooking spray. Remove boiled potatoes from water, drain and add to the prepared baking sheet.

Using the bottom of a glass jar or metal measuring cup, carefully press down on potatoes to smash and slightly break apart.

Drizzle with olive oil, salt and pepper and bake for 30 minutes.

Remove from oven and drizzle with sriracha mayo.

Cooking Note:

If you don’t have a pre-made sriracha mayo, make your own! Mix ½ teaspoon sriracha (more if you can handle the heat) with 1 tablespoon mayo and stir well until combined.
