The Emilie Henry Mini-Baguette Baker has two parts: the bottom dish with baguette molds and a domed lid. It’s made of refractory ceramic to create the right level of humidity during cooking. No need to put a bowl of water in the oven! The baker’s shape helps dough rise while creating a light, airy interior and a crispy outside crust.

  1. First, knead together dough and let it rise until it has doubled in size.
  2. Then, degas the dough by punching it down.

I was so proud of how these baguettes turned out, especially for my first time attempting any kind of French bread! To increase the fiber content, try using white whole-wheat flour.
