Apricots with Basil Ricotta and Almonds

A light and flavorful snack that feels fancy but can be made in 5 minutes or less! Simply spread dried apricots with creamy basil and honey ricotta, then top with raw almonds for a satisfying crunch.

Apricots with Basil Ricotta and Almonds

Ingredients

  • 5 (36 grams) dried apricots
  • 2 tablespoons (30 grams) part-skim ricotta cheese
  • 2 (<1 gram ) basil leaves, finely chopped
  • ¼ teaspoon (9 grams) honey
  • 10 (10 grams) whole raw almonds

Directions

Place dried apricots on a small plate. In a small bowl, combine the ricotta cheese, chopped basil leaves and honey. Spoon the ricotta mixture onto each apricot. Top each apricot with two almonds and enjoy. Serves 1.
