1 cup Florida Orange Juice (fortified with calcium and vitamin D)
2 large eggs
2/3 cup canola oil
3 cups grated apple, unpeeled (~ 3 apples)
1 cup light brown sugar, packed
1 tablespoon vanilla extract
1 tablespoon orange zest
2 cups white whole-wheat flour
2 teaspoons baking soda
2 teaspoons baking powder
¾ teaspoon ground cloves
½ cup nonfat plain Greek yogurt
Preheat the oven to 375 degrees Fahrenheit. In a large mixing bowl, beat the eggs and canola oil with a fork. Add the grated apple, brown sugar, vanilla extract, orange zest and FLOJ. Mix well with a mixing spoon.
In a medium mixing bowl, combine the flour, baking soda, baking powder and cloves. Pour the contents of the flour mixture into the large mixing bowl and mix the wet and dry ingredients with a wooden spoon or other mixing spoon. Using a spatula, gently fold in the Greek yogurt. Pour the batter into 2 standard loaf pans that have been prepared with nonstick baking spray or additional canola oil. Bake until a cake tester placed into the center of the loaves comes out clean, 30 minutes. Cool in the pan on a wire rack for about 10 minutes before removing and allowing to cool further directly on the rack.
