Orange Braised Fennel Bruschetta with Goat Cheese

Simple, healthy and delicious this recipe of orange braised fennel braised is served on top of a toasted whole-wheat baguette with goat cheese, drizzled with honey and topped with basil and arugula. It is great served as an appetizer or a snack. Fennel supplies vitamin C, potassium and manganese, while arugula delivers vitamin K and some potassium and magnesium—all of which may work with calcium in fortified Florida Orange Juice (FLOJ) to support bone health and electrolyte balance.  In addition, calcium, potassium and magnesium can help reduce blood pressure and promote proper nerve function.

Ingredients

2 cups medium fennel bulbs, cored and chopped
1/2 cup almonds, chopped
2 teaspoons garlic, minced
2 tablespoons extra virgin olive oil, divided
1 cup Florida Orange Juice
¾ cup low-sodium chicken broth
¼ teaspoon black pepper
1 whole wheat baguette
1 container (5.3 oz. 150g) goat cheese
10 basil leaves, chiffonade
½ cup arugula
1 Tablespoon honey

Instructions
Sauté fennel with garlic and one tablespoon olive oil for five minutes or until browned. Deglaze pan with FLOJ, scraping brown bits up to incorporate into liquid. Add chicken broth and black pepper, bring to a boil and reduce until liquid is almost fully absorbed, approximately 5-10 minutes. Let cool. Chiffonade (thinly slice) basil. Slice baguette into ¼ inch slices and toast. Spread with goat cheese, top with fennel mixture and chopped almonds. Drizzle the remainder of the olive oil, the honey and top with basil and a few arugula leaves.
